Marshmallow Recipe (by request)

You will need:

.75 oz unflavored gelatin (three envelopes of Knox)
1/2 c cold water
2 c sugar
2/3 c light corn syrup
1/4 c cold water
1/4 tsp. salt
1 Tbsp. vanilla extract
Corn starch
confectioners sugar

First, line either an 8x8 or a 9x9 dish with plastic wrap. Grease the bottom, and all four sides (non stick spray works great).

Using the bowl form an electric mixer (you don't HAVE to have one, but it really does help) pour in the 1/2 c. of cold water. Sprinkle the three packs of gelatin on top of water and let it sit for about 10 minutes.

In a medium sauce pan, combine the sugar, 1/4 c. water and the corn syrup. Bring to a rapid boil. Once it reaches a hard boil, let it boil for one minute.

Very carefully, pour the boiling syrup into the water/gelatin mixture. Using the whisk attachment, whisk the mix together, adding in the salt, starting off slowly, and gradually increase to high speed. Let alone to whisk for about 10 minutes or until it almost reaches room temperature. Add in the vanilla extract and whisk to mix throughly.

Grease you hands and a silicone spatula, and pour into prepared dish. Smooth out the top. Cover with an additional GREASED piece of plastic wrap, being sure it is covered 100%. Let sit and set for at least 4-5 hours (or even better, over night) until set.

Dust counter top with confectioners sugar and turn marshmallows out on top. Cut with a hot knife or greased pizza cutter into bite sized pieces. Mix together equal amounts of cornstarch and confectioners sugar. Toss marshmallows in sugar mix until no longer sticky.

You can also toss in colored sugar for more of a Peeps effect.

  3. Trust me, these are SO good! Quinn and I made a second batch to give away on Easter when we are visiting family. They are really good plain, but even better dipped in chocolate! YUMMO!
